In collaboration with acclaimed architect Julie Fisher, John Martin Companies undertook the transformation of a former coin shop into Hewn Bakery's Winnetka Outpost, located at 894 Green Bay Road. This project involved retrofitting the existing space to align with Hewn's commitment to artisanal, naturally fermented breads and pastries. Our team worked closely with Hewn's owners to value engineer the project, implementing cost-effective solutions without compromising on quality. By self-performing several trades, we effectively reduced expenses, passing the savings directly to the client. The result is a warm and inviting bakery that seamlessly integrates into the North Shore community, offering a curated selection of Hewn's renowned baked goods.
